Chicken avocado brie sandwich with a flavor burst!

a quick lunch that’s healthy and delicious

all you need is about 8 minutes and a healthy appetite...

Toast any bread with the chicken, brie cheese or whatever you have on hand (I had some leftover brie)
You can put a little mayo on the toast or olive oil and salt/pepper
add the lettuce, tomato, cucumber (sliced lengthwise so it’s easier to eat and manage) then avocado (smashed up so it doesn’t slip out when you take a bite- it’s so annoying!)

I also salt the tomato and cucumber so you have flavor on the inside

The surprise flavor burst is the basil leaf which does add a nice touch- you really taste it! Go ahead and stuff a bunch in there!  The more the merrier you will be!
