Saute Zucchini slices or zoodles in some olive oil and garlic, salt and pepper it

Boil the pasta in salted water until al dente

drain pasta reserving a cup of the cooking water

mix the pasta into the zucchini then add a burrata (sliced) with all it’s liquid, alternating with the pasta water and 1/2 cup pesto until it’s creamy to your liking. You can add some parmesan cheese if you like (but i didn’t) and serve. voila!
