I was really in the mood for a grilled cheese sandwich today but I can’t stop at the cheese. I scourge my frig and find wonderful additions like arugula or spinach (my kids detest arugula), tomato (never store tomatoes in fridge as they lose all flavor).
You can use a panini maker, grill or skillet or even a waffle maker!
Just pile on your ingredients and place in your cooker of choice. You can spread a little butter or olive oil on the bread if you want it more decadent.
When the cheese has melted

Toast any bread with the chicken, brie cheese or whatever you have on hand (I had some leftover brie)
You can put a little mayo on the toast or olive oil and salt/pepper
add the lettuce, tomato, cucumber (sliced lengthwise so it’s easier to eat and manage) then avocado (smashed up so it doesn’t slip out when you take a bite- it’s so annoying!)
I also salt the tomato and cucumber so you have flavor on the inside
The surprise flavor burst is the basil leaf which does add a nice touch- you really taste it! Go ahead and stuff a bunch in there! The more the merrier you will be!
